Have you ever wanted to try making Conkie but just don’t know where to start? Here is an easy Guyanese pumpkin conkie recipe that we’re sure you’ll enjoy making and eating, compliments of “A Taste of Guyana” – Dr. Odeen Ishmael.

Here’s all you’ll need:

 

1 lb cornmeal

1 lb pumpkin

1 oz lard

1 tsp black pepper

½ pt water

1 grated coconut

1 oz margarine

2 tsp salt

Sugar to taste

4 oz dried fruit

Twine

Banana leaves

 

Easy as 123, here’s what you’ll need to do:

  • Grate the coconut and pumpkin, and add all the other ingredients.

 

  • Stir in enough water to make a mixture of dropping consistency.

 

  • Wipe the banana leaves clean and heat them to make them pliable. Cut them into 8 x 8 inch squares, and wrap around lumps of filling, tying the bundles with the twine.

 

  • Place in boiling water and boil for about 20 – 30 minutes.

 

  • Unwrap and enjoy!

 

Note: If banana leaves are not available, mixture may be steamed in a greased bowl instead.
