It’s that time of the year again! Time for black cake and ginger beer! We know that you want the best tasting black cake around and that only comes with doing it the right way, not just mere hours before but days and sometimes weeks before. In this two part instruction guide, we will show you, firstly how to prepare your black cake fruits and lastly, how to finish off baking this holiday treat.
Three days before you need to bake (for good measure, one week):
Chop all the fruits you will be using in the black cake and place in a large bowl. Pour cherry brandy and rum and leave in a cool corner, covered, so that it can soak up the alcohol. Three days before is optimum but the longer you leave it the better! One day should be minimum though!
On the day that you’re baking– Blend the fruits:
Pour the soaked fruit and remaining juices into a blender and blend until thick and chunky.
